Ingredients
2 Extra Large Eggs
1.5 Tbsp Skim Milk
1/4 Tsp Pure Vanilla Extract or Paste
1/4 Cup Cake Flour or Flour of Choice
1/2 Tsp Baking Powder
2-1/2 Tbsp Splenda or Stevia
Preparation
Step 1: Seperate egg yolk from egg whites
Step 2: Wisk or mix egg whites until fluffy with firm peaks
Step 3: Mix egg yolks with stevia, then slowly add flour while mixing.
Step 4: Add baking powder and mix, then add vanilla extract
Step 5: Slowly add egg whites to yolks while FOLDING not stirring.
Step 6: Scoop into skillet and then cover for 5 minutes.
Step 7: Add another dolup of the mixture onto each partially cooked pancake and cover for 5 minutes.
Step 8: Carefully flip each pancake and cover for 2-5 minutes.
Toppings: Greek yogurt of your choice, frozen berries that have been thawed in the microwave for the natural juices/syrup, and a sugar free syrup of your choice.
