Ingredients:

  • 1 (14-ounce) block tofu, cut into 1-inch cubes

  • 2 cups mixed vegetables (such as broccoli, bell peppers, and snap peas)

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 2 tablespoons soy sauce

  • 1 teaspoon sesame oil

  • Salt and pepper to taste

Preparation

Instructions:

  1. Heat a large skillet over medium heat. Add tofu and cook for 3-4 minutes, until golden brown on all sides. Remove from skillet and set aside.

  2. In the same skillet, add olive oil, garlic, and vegetables. Cook for 5-6 minutes, until vegetables are tender.

  3. Add cooked tofu, soy sauce, sesame oil, salt, and pepper to the skillet. Toss to coat.

  4. Serve over quinoa or brown rice.
