Ingredients
Ingredients:
1 (14-ounce) block tofu, cut into 1-inch cubes
2 cups mixed vegetables (such as broccoli, bell peppers, and snap peas)
1 tablespoon olive oil
2 cloves garlic, minced
2 tablespoons soy sauce
1 teaspoon sesame oil
Salt and pepper to taste
Preparation
Instructions:
Heat a large skillet over medium heat. Add tofu and cook for 3-4 minutes, until golden brown on all sides. Remove from skillet and set aside.
In the same skillet, add olive oil, garlic, and vegetables. Cook for 5-6 minutes, until vegetables are tender.
Add cooked tofu, soy sauce, sesame oil, salt, and pepper to the skillet. Toss to coat.
Serve over quinoa or brown rice.
