Ingredients
1 pound boneless, skinless chicken breasts
1 bell pepper, cut into 1-inch pieces
1 onion, cut into 1-inch pieces
1 cup cherry tomatoes
1 zucchini, cut into 1-inch pieces
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 teaspoon dried oregano
Salt and pepper to taste
Preparation
Instructions:
Preheat grill to medium heat.
Cut chicken into 1-inch pieces and place in a large bowl.
Add bell pepper, onion, cherry tomatoes, and zucchini to the bowl with the chicken.
In a small bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper. Pour over chicken and vegetables, tossing to coat.
Thread chicken and vegetables onto skewers. Grill for 8-10 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.
Serve with quinoa or brown rice and a green salad.
