About the Recipe

Ingredients

  • 1 pound boneless, skinless chicken breasts

  • 1 bell pepper, cut into 1-inch pieces

  • 1 onion, cut into 1-inch pieces

  • 1 cup cherry tomatoes

  • 1 zucchini, cut into 1-inch pieces

  • 1/4 cup olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Preparation

Instructions:

  1. Preheat grill to medium heat.

  2. Cut chicken into 1-inch pieces and place in a large bowl.

  3. Add bell pepper, onion, cherry tomatoes, and zucchini to the bowl with the chicken.

  4. In a small bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper. Pour over chicken and vegetables, tossing to coat.

  5. Thread chicken and vegetables onto skewers. Grill for 8-10 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.

  6. Serve with quinoa or brown rice and a green salad.
