4 (4-ounce) salmon fillets
2 cups mixed vegetables (such as broccoli, bell peppers, and cherry tomatoes)
1 tablespoon olive oil
Salt and pepper to taste
Preparation
Instructions:
Preheat oven to 400°F.
Place salmon and vegetables on a baking sheet lined with parchment paper.
Drizzle with olive oil and season with salt and pepper. Toss to coat.
Bake for 12-15 minutes, until salmon is cooked through and vegetables are tender.
Serve with quinoa or brown rice and a green salad.
