  • 2 cups mixed vegetables (such as broccoli, bell peppers, and cherry tomatoes)

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Preparation

Instructions:

  1. Preheat oven to 400°F.

  2. Place salmon and vegetables on a baking sheet lined with parchment paper.

  3. Drizzle with olive oil and season with salt and pepper. Toss to coat.
